The hubby and I headed down to Orlando the Thursday before the 2015 Wine and Dine Weekend. We checked into the beautiful Caribbean Beach Resort on the Walt Disney World property for a three-night stay. I have stayed at this resort but only for one night. I felt I needed to experience this resort more before I would recommend it to others.
It had a very nice colorful colonial on the beach theme! This was one of the first trips we have taken to Disney World without the little man so we actually had plenty of room for the two of us. We didn’t spend too much time checking out the room. We had dinner reservations at Epcot, so we dropped off our luggage and headed out.
I am not sure why but I had made two advance dining reservations for Wine & Dine Weekend even though I knew it was the Food & Wine Festival at Epcot. The first one was at Teppan Edo in Japan at Epcot. Neither of us had eaten here before and we like to try something new each trip “home”. We will definitely be going back and taking the little man next time! It was so delicious and a good filling meal to start my carb loading for the race weekend.
We didn’t do much after dinner but I took the opportunity to walk hubby around and show him the kiosks for the festival. I had been to the Food & Wine Festival but this was his first trip and he didn’t know what to expect. We didn’t sample any of the food until the next day.
We both LOVE Epcot so we headed back to Epcot for round 2. I knew that I wanted to take it easy this trip because this race is at night and I had never done a night race. I was also still on antibiotics from a sinus infection so I didn’t have unlimited energy. We cruised around the showcase and sampled many of the delicious fares. My hubby was floored by the food! My favorite was the crispy fried pork belly in Brazil! OMG that thing melted in my mouth!!
Another fan favorite that I tried this trip was the Cheddar Cheese soup in Canada…we both love cheese (like Remy loves cheese!) and this was fabulous! It was so good that I bought the Food & Wine Festival cookbook just because this recipe was in it. Luckily anyone can sample this soup anytime at Le Cellier in Canada at Epcot. And now I know why it is on their everyday menu! YUM!!
After spending Friday sampling cuisines from all around the world, I took Saturday pretty easy. I took a nap a little after lunch so I could get up and be good and refreshed for the race. I made sure to get my KT taping done earlier in the day so I was ready to go.
If you haven’t tried KT Tape, I highly recommend it. It has made a huge difference in my running and reduced my shin pain to almost nothing. They always have a booth at the runDisney Expos so go by and give them a try. Not sure if they will continue this, but you usually get one free taping. I buy a roll and get them to tape both of my shins and one of my ankles. I am sure I look funny walking around the parks but this stuff is a life saver!
KT Tape also has a comprehensive website with lots of YouTube tutorials that will show and teach you how to wrap practically any part of your body. I have done it a few times with longer runs at home, but I let the professionals do it at the Expo for my really long runs.
Also, the Expo is a great place to pick up anything you might have left at home. They have just about anything you could possibly need and lots of stuff you probably don’t need.
After you visit the Expo, you have your bib and you are ready for the race!
